  1、準備材料:番薯葉400克、雞蛋3個、生姜4片。

  2、番薯葉洗淨,切段;雞蛋去殼,拌勻為蛋液。在镬或瓦礃裡加入清水1500毫升(約6碗量)和姜,武火滾沸後,下番薯葉煲至剛熟時,徐徐倒入蛋液,下鹽和油便可。為3-4人量。這個菜蛋白質維生素B2含量豐富。
