  1、烹調前,先用冷水将香菇表面沖洗幹淨,帶柄的香菇可将根部除去,然後“鰓頁”朝下放置于溫水盆中浸泡,待香菇變軟、“鰓頁”張開後,再用手朝一個方向輕輕旋攪,讓泥沙徐徐沉入盆底。

  2、浸泡香菇的水除去泥沙後還可利用。如果在浸泡香菇的溫水中加入少許白糖,烹調後的味道更鮮美。
