材料:紅曲、魚、食鹽、白酒,均适量。

首先将魚整理好洗淨後,抹上食鹽;

将抹上食鹽的魚挂起,風吹個三到四天,待魚體表面水分已幹時,把魚切成段或坨;

将紅曲和白酒混合後,将切好的魚塊放到液體中;

将粘有紅曲液體的魚塊,放入幹淨無水的做泡菜的瓦壇中;

密封壇口,幾個月後随吃随取。
