剁椒蒸魚鳔

制作:1、油菜入沸水快速焯水,撈出鋪入盤中。

2、400克帶餡魚鳔放入沸水快速汆水,撈出瀝幹水分,鋪入油菜上備用。鍋入底油燒熱,下入紅、黃剁椒醬各25克,調入2克雞粉、8克白糖小火炒香,盛出鋪在魚鳔上,上籠蒸5分鐘取出,點綴蔥絲、紅椒絲即可。

制作關鍵:帶餡魚鳔本身有鹹鮮味,剁椒也是鹹的,因此調味時不必再加鹽,并加入适量白糖中和鹹味,且能提鮮。
