  1、蝦洗淨,減去蝦槍和蝦須,并挑去蝦線。挑蝦線時,選擇蝦的身體第二個關節處,用牙簽先刺破表皮,再往下面一點一挑就帶出了蝦線,然後輕輕挑出即可;将處理好的蝦加少許料酒腌一會。

  2、鍋燒熱倒油,放入蒜片姜片爆出香味。

  3、再倒入蝦翻炒,炒至蝦變色後,加入老幹媽辣醬、少許生抽、一點白糖繼續翻炒。

  4、加入青紅椒和适量水,蓋鍋蓋,焖至水收幹,加鹽調味,撒蔥花即可。
