  1、酸菜魚的魚片要在上漿的澱粉中加入雞蛋清,這是保證魚片嫩滑的關鍵步驟。

  2、先将蔥、生姜、胡椒粉、啤酒以及少量的鹽放入魚片中腌制5分鐘即可,

  3、再用澱粉和雞蛋清混合的漿液裹勻,酸菜魚的魚片厚度大約再5毫米的樣子,這樣腌制出來的酸菜魚片非常嫩。
