  芹菜素餡餃子的調餡步驟如下:

  準備材料:芹菜1000克,水發香菇150克,豆腐幹100克,雞蛋4個,蔥末50克,精鹽1克,胡椒粉5克,白糖15克,味精15克,香油50克,精煉油150克;芹菜洗淨,切為細末,用精鹽腌漬,擠幹水分,水泡香菇、豆腐幹均切細粒,雞蛋磕入碗中,加精鹽攪勻成蛋液;炒鍋置火上,放入精煉油燒熱,倒入雞蛋液攤勻煎熟,起鍋晾涼後剁碎,加入芹菜、水泡香菇粒、豆腐幹粒和勻,再加入蔥末、精鹽、胡椒粉、白糖、味精、香油等拌勻,素菜餃子餡即成。
