  1、嗅,用鼻子聞肉的氣味。新鮮肉的氣味較純正,無腥臭味。

  2、壓,用手指輕輕按壓肉表面。若按壓後的凹印可迅速恢複原狀,為新鮮好肉。

  3、摸,用手觸摸肉表面,若表面微幹或略顯濕潤,不粘手者為好肉。

  4、觀察,仔細觀察肉的色澤。首先要看肉皮,如牛羊肉的表面無紅點,是好肉;其次看肌肉,鮮肉光澤而紅色勻稱,肉色稍暗的為劣質肉。
