  1、将肉切成長約5CM,寬為3CM,厚為0.3CM的薄片(你可以将肉稍凍一下再切);青蒜、紅椒切段。

  2、炒鍋内不放油或少放油,鍋熱時下肉片煸蓋蓋關小火炒至吐油(火千萬不宜大,一定要炒至肉片吐油)取出待用。

  3、下豆瓣、豆豉炒香并上色再放醬油、糖炒勻,千萬不要放鹽。

  4、下煸好的肉片翻炒均勻上色。

  5、下青蒜、紅椒翻炒。

  6、炒至斷生,香味四溢即可起鍋(青蒜不宜久炒,斷生即可,也可以用蒜苔、青椒等代替)。
