  1、将水發猴頭菇去根蒂,切成片,人沸水鍋中略氽後撈出,擠幹水;豬肋條肉去皮,洗淨,剁成茸,放人碗内,加雞蛋清、水、精鹽攪勻上勁,擠成圓子,放人沸水鍋中氽熟撈出。

  2、水發玉蘭片、油菜心洗淨,切成片;蔥、姜洗淨,分别切成細絲。将油菜心放人沸水鍋中氽熟撈出。炒鍋上小火,放人熟豬油和用幹澱粉調成的雞蛋黃液,攤成蛋皮取出,切成片。

  3、炒鍋内加入清湯、玉蘭片、海米、黑木耳、油菜心、蔥絲、姜絲、蛋皮、豬肉圓子、猴頭菇片燒沸,加精鹽、味精、醋,撇去浮沫,淋人香油出鍋即可。
