将雞骨拌少許鹽置于碟中一端,把雞皮切成條狀鋪面。

将酸苕頭切絲,放入雞肉絲、紅椒絲、海蟄絲,加餘下調料拌勻,放在碟的另一端,撒上芝麻便成。
