  1、雞胸肉切絲,加雞蛋清、鹽、濕澱粉攪拌均勻。

  2、杏鮑菇和青椒分别洗淨,切絲。

  3、鍋中加油燒熱,先将雞絲滑熟,再撈出控油。

  4、鍋入油燒熱,炒香蔥、姜、蒜,再炒蘑菇絲和青椒絲,加料酒和生抽調味。

  5、略微翻炒後,将滑熟的雞絲倒入鍋中,加少量湯。

  6、鍋内迅速加鹽、糖、雞精、胡椒粉,用濕澱粉勾薄芡,翻勻後出鍋。
