  1、存放鹵水應用土陶盛具。鹵水上面的浮油要适量,過多應打去。夏天每天将鹵水燒開兩次,盛入器皿中,在遮光、透風、幹燥、不易碰撞的環境中固定存放。還可将燒沸冷卻後的鹵水裝入陶瓷器皿中,用保鮮膜封口後,放入冰箱存放。

  2、鹵菜冷卻後可在表面塗上一層麻油,以防止鹵菜表面風幹變色。原料質地較老的鹵菜,可在鹵制完畢後浸在鹵罐中,随用随取。
