西芹燒鳝魚段

  1、主料:西芹一顆、鳝魚幾條、泡椒、姜片、蔥段、蒜茸各适量。

  2、鳝魚切斷,料酒生抽水澱粉腌10分鐘備用;

  3、西芹切斜刀,少鹽微涿,出水後清水洗淨空幹;

  4、泡椒切段,姜片、蔥段、蒜茸;

  5、熱鍋辣油(有不可太少),入蟮段爆,待鳝魚肉微收緊,滴幾滴老抽出色,急起鍋放一邊;

  6、就餘油入泡椒,姜蒜,最後入蔥,爆出香味後,把蟮段再入鍋,翻炒幾下,趕緊放鹽糖雞粉,起鍋前滴醋。
