  1、主要食材:鳝魚、黃酒、鹽、醬油、白糖、蔥末、姜末、香油。

  2、鳝魚處理幹淨,切絲。

  3、鍋放油燒熱,将鳝魚逐條放入以防粘連,炸3分鐘撈出。

  4、鍋中留油燒熱,加蔥和姜末煸香。

  5、加黃酒、醬油、糖燒成鹵汁,加鳝魚肉,反複颠炒幾次,澆上香油出鍋即可。
