1、鍋裡燒水，水開後放入手擀面，2-3開後，撈起用冷水沖涼，浸泡在冷水裡待用；
2、雞蛋打散，加鹽和胡椒粉攪拌；
3、大醬用同樣分量的清水卸開；
4、鍋裡放油燒熱，和平時一樣翻炒雞蛋，待蛋熟透，澆上大醬汁翻炒，待聞到醬香撲鼻即可盛出；
5、盛一碗面條，擺上青瓜絲和雞蛋醬，吃時拌勻即可。
