幹炸香菇怎麼做

  用料:蘑菇、精鹽、味精、雞蛋清、澱粉。

  制作過程:

  1.先将蘑菇撕成片,撒上鹽,鹵上5分鐘,然後攢幹;

  2.将蛋清倒入碗内,用筷子順一個方向連續抽打起泡沫,再加幹澱粉,順同一方向攪拌均勻,制成蛋泡糊,;

  3.把攢幹的蘑菇放在蛋泡糊裡,抓勻;

  4.炒鍋置于火上,油燒五六成熱後,将挂好糊的蘑菇逐一下鍋,其間要用漏勺撈出用勺将蘑菇打散或用筷子輕輕翻動,炸至外焦裡嫩,色澤略微金黃即可。
