  1、雞爪焯水,冷水入鍋,放蔥節,姜片,料酒,撇浮沫撈出,入涼水,瀝幹水分備用。

  2、熱鍋倒油,放冰糖,炒出糖色,放大料,幹辣椒,香葉,桂皮,花椒,下雞爪翻炒。

  3、裹上糖色,放蔥節,姜片,一罐啤酒,再加水末過雞爪。

  4、加一勺老抽,一勺生抽,一勺耗油,鹽若幹,炖至軟爛,40分鐘左右,收汁出鍋。
