1、首先應該用洗潔精刷洗幹淨，除去在制作過程中産生的工藝污垢和商品保養中的防氧化塗層。
2、把炒鍋放在爐竈上熱，用豬肉皮的肥肉面把鍋内面（或抹布蘸食用油）反複擦蹭，邊蹭邊“油煉”。最好鍋内顔色變暗或發黑就可以了。
3、洗去油污，烤幹備用。鑄鐵鍋質脆易炸裂，不要驟冷驟熱變化、小心摔打碰撞、注意幹燥保管、保持内面略有油膜層，多炒少炖為宜。
