  1、排骨洗淨,放入冷水鍋中焯燙去除血沫,撈出後,放入另一鍋清水中,放入生姜一塊、蔥一棵和八角一顆,大火燒開,小火炖煮2個小時,制成排骨湯。

  2、平菇洗淨,手撕成絲,熱水焯燙後,撈出控幹水分。生姜洗淨,去皮切絲。香菜洗淨,切小段。

  3、取排骨和排骨湯,放入鍋内,燒開,放入平菇絲、姜絲和少許鹽,小火炖煮20分鐘,至平菇軟爛。撒入香菜段和少許香油,即可。
