  1、鮮麻椒放平底鍋内焙幹,火一定要小防止胡鍋。麻椒焙到香味竄出。用手指可以碾碎為好。不要焙的過幹。盛出晾涼,用擀面杖碾碎,裝在密封性能好的瓶子裡備用。菜快出鍋時撒入,香麻過瘾還不苦。

  2、要用麻椒粉的話,不用油炒,把鍋燒熱,直接把麻椒倒進鍋裡,用小火慢慢炒,炒脆再碾細,這樣做出的麻椒面麻而不苦。
