雞俊子學名雞胗。食材:雞胗、幹辣椒、大蔥、生姜、白胡椒粉、木薯澱粉。雞胗洗淨加入兩勺食鹽,用手揉抓去除雞胗的腥味,沖洗幹淨瀝幹水分,處理幹淨的一切為四。

腌制雞胗,放入生抽、料酒去腥、大蔥和姜片擠出蔥姜汁,放入孜然粉、白胡椒粉、粗辣椒面、一勺白糖提鮮,上手揉抓均勻,放入兩勺木薯澱粉。

時間到時撈出雞胗去除輔料,把腌制好的雞胗放入五成熱的油鍋中,炸制表面酥脆撈出,水分炸幹才更香,撈出,油溫再次升至七成熱,放入雞胗複炸下,複炸十秒即可。
