1、殺鴨子時,會發現鴨子的尾端兩恻有兩個豬肝色的肉豆即臊豆,應去掉。

2、用洗米水将鴨子浸泡半個小時後,撈出。

3、在水中放入一兩瓣大蒜和适量醋,直至水沸騰,放入鴨子,煮十分鐘,去掉血沫。

4、再将處理過的鴨子制作烤鴨,即可去除腥味。
