  1、将雞肉切成小方丁,盛入碗内,加精鹽,用澱粉上漿;栗子切成小丁;蓮子洗淨泡軟煮熟;核桃仁切成小丁。将料酒、醬油、白糖、醋、味精用澱粉調成芡汁備用。

  2、炒鍋置于火上,倒入花生油,燒至五成熱時下雞丁,用筷子攪散,稍炸即倒入漏勺中瀝幹油。

  3、鍋内留油少許,投入蔥末,煸炒出香味時将雞丁、栗子、蓮子、核桃仁倒入,并立即将調好的芡汁加水調勻,倒人鍋内,拌炒幾下,使雞丁、栗子、蓮子均勻地蘸上芡汁,淋上芝麻油,出鍋裝盤即成。
