  1、龍蝦洗淨,從背部剖開取出蝦肉,在刀口兩面剞十字花刀,再切成2.5厘米大的塊,用鹽、醪糟汁、姜、蔥腌漬入味,用蛋清豆粉拌勻。

  2、鍋内菜油燒至五成熱時,将龍蝦抖散入鍋略炸,至卷縮成球撈起。

  3、待油溫升至七成熱時入鍋複炸至色黃、肉熟起鍋。

  4、蝦殼和頭尾均入鍋略炸,起鍋入盤複原蝦形。

  5、鍋内菜油燒至五成熱時,下番茄醬、蔥節、蒜片炒香,烹入滋汁,随即下蝦球,翻欠扛至龍蝦均勻裹上番茄汁時淋入香油,簸勻盛入蝦殼内即成。
