  1、将豬手(豬蹄)收拾幹淨,放在火上,燒到外皮變黃色取出;

  2、再将豬手放入熱水中稍泡,把表皮刷至黃白色,用刀從中間片開;

  3、蔥切段,姜、蒜分别切片備用;

  4、将鍋置于旺火上,倒入植物油燒熱,放入豆瓣醬煸香,再加入蔥段、姜片、蒜片、大料、陳皮,烹入醬油、料酒,倒入清水(500毫升);

  5、把豬手、白糖、料酒、精鹽、味精放入鍋内燒開;

  6、用小火慢煮,待豬手煮爛,撈出晾涼即可。
