蚝油牛柳

将牛肉洗淨,切片,加入醬油、水澱粉攪拌均勻;将油菜去老葉,掰開,洗淨,選菜梗部,切段;将蚝油、鹽、料酒、味精、胡椒粉加入少許清水,調成汁,備用。

鍋置火上,放油燒至五成熱,放入牛肉片略炸,撈出瀝油。

原鍋中底油燒熱,将蔥末、姜末煸炒出香味,放入牛肉片、油菜段,淋上調好的汁,翻炒至熟即可。
