蓮子用熱水浸泡,至發漲,去心;

百合去雜質,洗淨;

瘦肉切塊,下沸水鍋中焯去血水,撈出洗淨。

将鍋燒熱加入油,炒香蔥、姜,再加入肉塊炒,烹八料酒,炒至水幹。

注入肉湯,加入鹽、味精、蓮子、百合,猛火燒沸,撇去浮沫,慢火炖肉熟爛,揀去蔥、姜即成。
