  1、烤豆腐切成5厘米寬、7厘米長、3厘米厚的長方塊,用堿水浸泡一下,拿出放在竹籃子裡,用濕布蓋起發酵12小時以上。

  2、再将折耳根、苦蒜切碎,裝入碗中加醬油、味精、麻油、花椒粉、煳辣椒粉、姜術、蔥花拌勻成佐料待用。

  3、将發酵好的豆腐排放在專的木炭渣鐵竈上烘烤,烤至豆腐兩面皮黃内嫩、松泡鼓脹後用竹片劃破側面成口,舀入拌好的佐料即成。
