  1、将蛋清、蛋黃散裝2個碗内打撒;熟火腿切割成碎屑;香萊擇洗幹淨、也切割成碎屑。

  2、炒菜鍋置火上燒開,添加豬闆油80克,熱後,先将蛋清放進,炒出片狀後,倒在漏勺中。

  3、炒菜鍋再刷淨,置火上,放進豬闆油40克。熱後放入姜蒜末炝鍋,加上老母雞湯,用食鹽、雞精調好口感。

  4、再放進炒好的蛋清、蛋黃,炒約分鐘上下,用水澱粉勾芡,淋入雞油炒勻。

  5、最終撒進熟火腿末、香萊末既成。
