  1、将莖用芥菜經鹽腌後壓榨,除去一部分水分,然後加入食用鹽和适量的香料及調料(如幹辣椒粉、花椒、茴香、砂仁、胡椒、山柰、甘草、肉桂、白酒等),再将其裝壇、封口,放在陰涼處存放。

  2、最後在隔絕空氣的條件下,壇裡的榨菜先經酒精發酵,後經乳酸發酵,産生特殊的酸味與香味,就成為可以售賣的榨菜了。
