  1、去嫩姜去除粗硬部分,洗淨、瀝幹。

  2、将作法1的嫩姜放入調理盆中,加入材料中的鹽拌勻,腌約5小時,再以手揉出苦水,并瀝幹水分。

  3、将作法2以冷開水浸泡約3小時,再将水倒出并瀝幹。

  4、取一小鍋,加水煮滾,再加入鹽、細砂糖煮溶,待涼加入白醋調勻,取一玻璃罐,将作法3的嫩姜放入,再加入糖醋汁密封蓋子,約10天即可。
