  1、材料:鮮蘑菇200克,菜心、泡辣椒、老姜、大蔥、鹽、味精、鮮湯、胡椒粉、水澱粉、豬油各适量。

  2、鮮蘑菇去根蒂,清洗幹淨,切成片;菜心去其老的部分,清洗幹淨;泡辣椒去籽及蒂,切成魚眼形;老姜去皮洗淨,切成姜片;大蔥洗淨,切成段。

  3、鍋置旺火上,燒水至沸,放入菜心氽至斷生,撈出瀝幹水分裝盤。鍋内燒豬油至四成熱,放人姜片、蔥段炒香,摻人鮮湯熬一會兒,撈去料渣,投人泡辣椒、蘑菇、鹽、胡椒粉,煮至菇熟,用水澱粉勾成清二流芡,烹人味精和勻,起鍋淋在菜心上即成。
