  1、豬肉剁細成餡備用。

  2、将每隻剪淨明蝦從肚部切開兩邊,不可切斷,用澱粉塗勻肚内,瓤入豬肉餡30克,抹上雞蛋,拍上面包屑。

  3、将炒鍋内豬油燒熱,用文火半煮炸明蝦至金黃色,熟後撈起淋油。

  4、将炒鍋燒熱,放入煎好的瓤明蝦,加入已用碗調好的汁,白糖、黃酒,香油炒勻,取起,每隻切開兩件,上碟便成,煎瓤明蝦就做好了。
