  1、兔肉洗淨,切成3厘米見方的塊,入清水中浸泡4小時,撈出放盆内,用精鹽、紹酒、蔥姜、花椒腌制4小時,再用清水洗淨。

  2、将兔肉放水鍋中出水,撈出洗淨。

  3、将兔肉、豬肉丁、雞清湯、蔥姜、紹酒放入砂鍋,上火燒沸,撇去浮沫,加蓋移至微火炖至兔肉酥爛,揀去蔥姜,加入冬菇、冬筍、青菜心燒沸,放入味精、胡椒粉,淋上芝麻油即成。

  4、若配蒜泥蘸食,更别具風味。
