肉餡先放鹽。食用鹽是調餃子餡的第一步,隻有先把食用鹽加進去,然後再放水,才能讓肉餡更容易吸收水分,從而變得更加的松軟。如果先放水再放鹽,不但放鹽的分量不好把握,而且後放鹽,會腌制出一些水分,導緻肉餡的水分過大,包出來的餃子在煮的時候會容易壞,因此肉餡要先放鹽。
