  1、材料:鴨腳10支,東山鴨頭鹵汁1鍋。将鴨腳放入滾水中氽燙1分鐘後,撈出放入冷水中沖涼。

  2、将東山鴨頭鹵汁煮開,放入作法1的鴨腳,轉微火煮滾後續煮約10分鐘即關火,接着浸泡約30分鐘後撈出鴨腳,即可吹涼、晾幹,備用。

  3、熱油鍋至約160℃,将作法2的鴨腳放入鍋中,以中火炸約30秒至表面焦香即完成。
