  1、鮮鲫魚宰殺洗淨,剞上一字花刀(以便蛋白質充分溶于湯内,增加湯的奶白),用鹽腌片刻控去水,在油鍋中兩面煎。香菇切絲,用開水氽一下。

  2、淨鍋加少量油上小火煸蒜姜末,再放湯、料酒,下入魚與白蘿蔔絲、香菇絲,大火燒開,待開鍋打去浮沫,調到中火煮約20分鐘,再放調味料與山花蛋奶,淋香油裝湯池,撒上姜絲即成。
