  1、将米洗淨用清水浸泡12小時以上,泡好的江米用手指可以碾碎。

  2、籠屜上鋪一塊潔淨的屜布,把泡好的将米倒入籠屜。

  3、把水瀝淨隔水蒸30分鐘,糯米降溫到30度,放在一個潔淨的有蓋大碗裡。把酒曲灑在糯米上面,保持酒曲的溫度和濃度。夏天常溫釀制,冬天要放在暖氣旁邊,把酒釀放到冰箱裡冷藏一夜更加美味。
