  1、将牛肉洗淨,切成四大塊,放開水鍋内煮開,撇去浮沫,加入蔥(打結)、姜片,改用小火焖煮至兩小時左右,當筷子能戳通時撈出冷涼。

  2、食用時,橫着肉紋切成薄片裝盤,淋上芝麻油,配以醬油、甜面醬、蔥段各一小碟食用中,放蔥結,姜片,黃酒,燒沸後,轉用小火焖煮約2小時,能用筷子戳通時即熟,可撈出大蔥洗淨切成段姜洗淨切成片備用。

  3、食用時,橫着肉紋切成大薄片裝盆,淋上麻油,上桌随帶醬油,甜面醬,蔥白段各一小碟佐餐。
