  1、原料:烏骨雞300克,蘆荟200克,鹽、料酒、胡椒粉、老姜、大蔥、豬油、味精、雞精、鮮湯各适量。

  2、烏骨雞洗淨,切塊;蘆荟去皮,放人沸水中氽焯去黏液,撈出切丁;老姜洗淨;用刀拍碎;大蔥洗淨;挽成結。

  3、鍋置中火上,燒油至六成熱,放人雞塊煸幹水分,加料酒、姜塊、蔥稍炒,摻人鮮湯,投入蘆荟,用勺撇去浮沫,加鹽、料酒、胡椒粉,改用小火,炖至雞肉松軟離骨,揀去姜蔥不用,烹人味精、雞精,和勻,起鍋即可。
