  1、先将淨鹌鹑切去頭、腳、翅尖,入盆,撒入鹽5克、胡椒粉0.5克拌勻,然後抹上奶油,腌30分鐘。洋蔥切絲,闆肉切片。

  2、鍋炙好,下入植物油燒至七成熱,下入鹌鹑炸上色,下入漏勺瀝油。鍋回火上,下入闆肉片,翻炒至吐油,下入洋蔥絲炒香至微黃,下入香葉、雞清湯,下入炸過的鹌鹑,燒開後改用文火蓋上蓋,炆焖至熟,調入鹽、胡椒粉将汁收濃,淋入辣醬油調勻。

  3、将闆肉片入盤墊底,碼上鹌鹑,淋上汁,将其他配料入碟與之一同上桌。食用時将鹌鹑放在炸面包片上盛上原汁,根據需要放上闆肉片,佐其他配料食之。
