  1、食材:羊肉、荞面饸饹。

  2、生羊肉切成小丁,豆腐及紅蘿蔔等也切成丁,并備蔥花。鍋中燒清油,油熱後潑制辣椒面,然後下肉丁、菜丁及蔥花,下調料,熟後出鍋裝盆待用。用羊尾及羊油煮一鍋湯,即為羊湯。

  3、吃饸饹時,将臊子放入羊湯,作為澆頭。可一次放入,也可邊吃邊放。饸饹可以是手工的,也可以是機器壓的。一般每碗有饸饹約1兩。羊湯應該多于饸饹。
