  1、選用魚的中段,切成指甲蓋大小見方的小塊,用姜末、鹽、料酒拌勻碼味,大約30分鐘,時間稍長更入味;

  2、鍋内放油燒至5成熱,将魚塊拌入一個雞蛋清和勻,滑入鍋中炸至金黃撈出備用;

  3、鍋内留少許油,放入姜蒜末、幹辣椒、花椒爆出香味,下魚塊翻炒;

  4、将醬油、醋、雞精、白胡椒粉、糖調制而成的味汁倒入鍋中,讓魚塊在鍋中入味,收幹湯汁起鍋裝盤即可。
