鲫魚不粘鍋技巧

  煎鲫魚要不沾鍋,首先要先把鍋燒熱,并且用适當的油滑鍋,保證熱鍋冷油。

  1、鲫魚洗淨,料酒、鹽、二流芡碼味,姜、蒜、泡紅辣椒、泡姜切碎,香蔥切細節

  2、鍋下菜油8成熱,下豆瓣炒香,再依次下泡紅辣椒、泡姜、姜蒜米炒至香味溢出,在倒入白湯(或水),下糖醋,熬開後放入鲫魚

  3、小火熬5分鐘待魚熟後,将魚撈出盛盤,鍋内下二流芡勾汁淋魚上,撒蔥花。
