  1、蔥、蒜洗淨,小蔥切段,蒜切片;

  2、小紅辣椒洗淨、切斷;

  3、姜去皮,切粗絲;

  4、臘魚洗淨,剁成大塊;

  5、鍋燒熱,放寬油,待油燒熱,放入2/3姜絲,炸1分鐘左右;

  6、姜絲撈出扔掉,将魚塊魚皮朝下擺入鍋中;

  7、大火将魚塊煎至兩面金黃,撈出,瀝幹油待用;

  8、鍋内留少許底油,重新燒熱,放入花椒爆香,再放入剩餘1/3姜絲、蒜、紅辣椒,煸出香味;

  9、放入魚塊,迅速翻炒幾下;

  10、放入白砂糖即少許水,翻炒均勻;

  11、倒入生抽;

  12、倒入少許醋,迅速翻炒均勻,撒上蔥花,關火起鍋。
