  1、主料:鴨腳二十四個,鮮蝦肉三兩,赤豬肉二兩。

  2、配料:生荷蘭豆仁二兩,精鹽錢半,味精一錢,鴨蛋一粒,胡椒一錢。

  3、做法:将鴨腳去掉肋骨,用開水煮成半爛待用。将蝦肉和赤肉混合打成肉漿,把鴨蛋打破取其蛋清,和味精、精鹽拌勻後,釀在已煮爛的鴨掌上面,另将荷蘭豆仁用開水燙熟後,漂涼水并脫去外面的豆膜,再擺放在肉餡上面裝入湯碗裡入蒸籠蒸熟,再加入上湯、味精、香油、胡椒即成。
