  1、撈出來的河蚌殺開,取出肉在石頭上用刀背敲打幾下河蚌肉身,這樣做出來的河蚌肉是脆的容易嚼。

  2、河蚌餃子最好采用辣椒陪襯,河蚌切小塊然後在剁碎,切小塊在剁碎這樣肉質更好,辣椒洗好跟剁好的河蚌肉一起在剁,剁的碎碎的就可以了,切點香菜小蔥姜末。

  3、加食用油、餃子調料、鹽、味精、醬油、放點醋(中和下腥氣)即可。
