2、公蟹也有黃色的東西，那是公蟹的肝胰腺。公蟹的性腺絕大部分是精巢，它在性成熟期會急劇增大，形成膠狀的蟹膏，顔色為白色，不過跟母蟹一樣，緊挨着公蟹精巢的位置也有肝胰腺器官，其蒸熟或煮熟後是黃色的，看起來如同蟹黃一樣，但口感不同，一般熟螃蟹的肝胰腺可能較為幹硬，而成熟度不高的螃蟹的肝胰腺則不容易凝結成塊，甚至有時候會變成稀稀的黃色液體，味道有時候也會發苦。
