椒鹽大蝦的做法

  1、準備材料:大蝦500克、香菜25克、鹽15克、辣椒、花生油、五香粉各适量。

  2、鮮活中蝦用水洗淨,先剪蝦須、蝦槍,剔出槍下幹;

  3、炒鍋用中火燒熱,放入鹽15克,炒至燙手而有響聲時,端離火口,倒入五香粉2克,拌勻即成淮鹽;

  4、辣椒切成米粒狀;

  5、炒鍋用旺火燒熱,放入花生油,燒至五成熱,下海蝦泡油至八成熟,連油一起倒入笊籬瀝去油;

  6、炒鍋回火上,放入已泡油的中蝦略煎片刻,加淮鹽和辣椒粒,炒至熟,裝盤即可。
